Caraway Pork Chops

This pork chop preparation comes from the 1951 collection, A World of Good Eating. The chops are cooked with a simple seasoning of caraway seeds, paprika, salt, and pepper. Caraway seeds add a boost of nutrition, as they’re an excellent source of dietary fiber, Vitamin C, and iron; they also add a warm, earthy flavor that complements the pork. The pork chops are simmered in water to form a broth so that they remain tender and moist.

Roll pork chops in the seasoned flour and sauté until brown. Sprinkle with caraway seeds and enough paprika to give a good color. Add water, but not enough to float seeds off the chops, and simmer until tender. 45 - 60 minutes.
