Bacon Roll-Ups
A classic appetizer that's both savory and satisfying, these bite-sized treats feature crispy bacon wrapped around a flavorful bread mixture. These would be perfect for parties or a quick snack. Bacon is a time-honored cured meat that has no shortage of enthusiasts. This recipe was originally shared on Taste of Home as a family recipe, handed down by a reader’s grandmother. The reader shares that it dates back to the 1930s, when her grandmother first started making these hearty breakfast rolls for her family. Apparently, they’ve been a staple ever since. A helpful hint: it is easier to roll the bread mixture into balls if a bit of water is added to it.

⅓ cup finely chopped onion

1 tablespoon butter

3 cups cubed day-old bread

¼ teaspoon celery salt

¼ teaspoon garlic powder

⅛ teaspoon salt

⅛ teaspoon pepper

1 large egg, lightly beaten

10 bacon strips

In a small skillet, sauté onion in butter until tender. In a large bowl, combine the bread cubes, celery salt, garlic powder, salt, pepper and onion mixture; toss to mix evenly. Add egg; toss to coat bread cubes. Roll into ten 1¼ inch balls. Wrap a bacon strip around each ball. Secure with a toothpick.

In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a thermometer inserted into stuffing reads at least 160°F (70°C). Drain on paper towels.
