Apple and Tomato Salad

This light and refreshing salad combines the natural sweetness of crisp apple slices with the juicy tang of fresh tomatoes. A touch of caster sugar enhances the flavors of both fruits, while a pinch of salt balances the sweetness. Tossed with your dressing of choice, this vibrant mix makes a delightful side or snack, especially in the summer. The recipe specifies the need for caster sugar, also called superfine sugar, which is a finely textured granulated sugar that falls between regular granulated sugar and confectioners' sugar in consistency. The dressing choice is left to us, but a simple olive oil and lemon juice dressing would be ideal. The quantities listed below are for one serving. Although apples come in many varieties, they are consistently one of the most popular fruits in the United States, along with bananas; it is interesting to know that, botanically, they are related to roses. Take equal quantities of eating apples and ripe tomatoes; skin the tomatoes and cut them in quarters; peel, core, and quarter the apples. Put them into the salad bowl with a teaspoonful of castor sugar sprinkled over them and a tiny pinch of salt, and moisten carefully with two or three tablespoonfuls of salad dressing.
